Ingredients
- 300g Grower’s Harvest long-grain rice
- 1 tbsp vegetable oil
- 365g pack Willow Farms diced chicken breast
- 1 Redmere Farms brown onion, cut into chunks
- 1½ Nightingale Farms peppers, deseeded and cut into chunks
- 440g jar Hearty Food Co Sweet and Sour sauce
White rice can always be swapped for brown (check cooking instructions for timings)

Method
- Cook the rice to pack instructions. Heat the oil in a wok or large frying pan. Add the chicken and stir-fry for 3 mins, until it starts to turn golden.
- Add the onion and peppers and stir-fry for 5 mins, or until the vegetables are soft.
- Pour over the sauce and simmer for 5-10 minutes until the chicken is cooked through.
- Top up with a little water if needed. Serve over the rice.
