- 100g cooked Christmas pudding, crumbled
- 3½ tbsp Irish cream liqueur, plus extra to serve
- 250ml whipping cream
- 1 tbsp icing sugar
- 4 meringue nests, crushed
- Orange zest, to garnish

- Whisk the Irish cream liqueur with the cream and icing sugar until billowy medium-stiff peaks form. Fold through the crushed meringue and crumbled Christmas pudding.
- Divide between 4 dessert glasses. Garnish with orange zest and serve with extra Irish cream liqueur poured over ice.
