Firecracker sausage subs recipe

Celebrate Bonfire Night with these sizzling, spicy sausage subs. They're topped with charred smoky veg and cheese for an epic sandwich that's packed with fireworks of flavour. See method
Ingredients
- 6 Tesco Finest sausages
- 1 tbsp olive oil
- 1 white onion, finely sliced
- 2 small peppers (any colour), finely sliced
- 2 cloves garlic, crushed
- ½ tsp chilli flakes
- 1 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp honey
- 4 sub rolls, sliced like a hotdog bun
- 30g mature cheddar cheese, grated
- chilli sauce, to serve
- ketchup, to serve
If you don't have any Cheddar, try using another hard cheese

Method
- Cook the sausages to pack instructions. Once cooked, cut each sausage in half lengthways.
- Meanwhile, heat the oil in a nonstick frying pan over a high heat. Stir fry the onion and peppers for 5-6 mins until lightly charred and softened. Add the garlic, spices and honey, then fry for another 2 mins. Season.
- Divide the veg between the sub rolls, then top each with 3 sausage halves. Sprinkle over the cheese and serve with ketchup or chilli sauce, if you like.
