Nothing says summer like a Pimm's, and our frosty take on the summer classic - with fresh fruit and ginger beer - is sure to be a refreshing, cool hit at any garden party. See method
Ingredients
- 200ml (7fl oz) Pimm’s No. 1
- 600ml (1pt) ginger beer or lemonade
- 4 small strawberries, hulled and sliced or halved
- 1 red apple, cored and thinly sliced
- 4 slices cucumber, chopped
- small handful fresh mint leaves, to decorate

Method
- Pour the Pimm’s and ginger beer or lemonade into a large freezer-proof container and freeze for 2 hours or until almost frozen.
- When you are ready to serve, scrape the Pimm’s mix with a fork to break up the ice crystals, then spoon into 4 glasses. Divide the fruit and cucumber between the glasses and decorate with mint to serve.
