Garlic crumpets recipe

Slathered with a herby garlic butter and sprinkled with two types of cheese, these garlic crumpets make an indulgent side or delicious snack. For a spiced-up version, try adding a little chopped chilli sprinkled over before baking! See method
Ingredients
- 6 crumpets, sliced in half
For the flavoured butter
- 50g butter, softened
- 2 cloves garlic, crushed
- 10g flat-leaf parsley, finely chopped, a few leaves reserved for the base
- 125g mozzarella, drained and finely chopped
- 100g Cheddar, grated
If you don't have any Cheddar, try using another hard cheese

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Line a 2lb loaf tin with baking paper.
- Mix the butter, garlic and parsley together, then add a good grind of black pepper and mix until well combined. Stir in the parsley, chopped mozzarella and grated Cheddar.
- Spread the butter mixture over each piece of crumpet. Layer the reserved whole parsley leaves over the base of the lined tin. Top with the crumpet slices, four at a time, layering up until they are used up.
- Cover with tinfoil and place in the oven for 20-25 mins.
- Remove and allow to cool slightly before turning out and serving.
Tip: No need to cut, just pull each piece of crumpet away to reveal the cheesy garlic goodness!
