Golden 'long life' noodles with velvet king prawns recipe

Ingredients
- 165g pack Tesco Finest raw jumbo king prawns, deveined
- 2 tsp rice wine or sherry
- ¼ tsp bicarbonate of soda
- 1 tbsp cornflour
- 1½ tbsp vegetable oil
- 2 nests dried medium egg noodles
- 1 carrot, cut into thin matchsticks
- 185g Chinese leaf cabbage, shredded
- 1 large onion, thinly sliced
- 2 garlic cloves, crushed
- 3 spring onions, cut into 5cm lengths
- 2 tsp sesame oil
- sesame seeds (optional)
For the sauce
- 3 tbsp oyster sauce
- 2 tbsp reduced-salt soy sauce
- 1½ tbsp granulated sugar
- 1 tbsp rice wine or sherry
If you haven't got any egg noodles, try using pasta like spaghetti instead

Method
- Put the prawns in a bowl with the rice wine, bicarbonate of soda and ½ tsp salt. Use your hands to massage until the liquid has mostly been absorbed. Add the cornflour and massage in, followed by ½ tbsp oil. Massage once more, then set aside to tenderise.
- Cook the noodles in a large pan of boiling water for 1 min, then add the carrot and cabbage; cook for 1 more min or until tender. Drain and set aside.
- Mix the sauce ingredients together in a bowl with 3 tbsp water; set aside.
- Heat the remaining oil in a wok over a mediumhigh heat; fry the onion for 6-8 mins. Add the garlic and spring onions and fry for 1-2 mins until fragrant. Add the prawns and cook for 1-2 mins, until the prawns are firm and have turned pink.
- Stir in the noodles, carrot and cabbage, and pour over the sauce. Cook for 1-2 mins to heat through, then drizzle with the sesame oil and scatter with sesame seeds, if you like.
