Grapefruit, melon and citrus salad recipe

Get fruity with this vibrant salad made with red, pink and yellow grapefruit, cantaloupe and honeydew melon and oranges. A no-cook dessert that's light and refreshing and packed with natural sweetness. See method
Ingredients
- 1 red grapefruit
- 1 pink grapefruit
- 1 yellow grapefruit
- 2 oranges
- 1/2 cantaloupe melon
- 1/2 honeydew melon
- 1/2 tsp fresh ginger, grated
- 2 limes, 1 juiced and zested, and 1 cut into wedges
- 3 tbsp honey
- ¼ x 30g pack fresh mint, half finely chopped and half leaves picked
If you don't have any limes, try a lemon instead

Method
- Using a sharp knife, slice the skin from the top and bottom of the grapefruits so they stand firmly on a board. Remove the remaining skin and pith with a knife, cutting thick strips from top to bottom. Cut each grapefruit into 5 or 6 slices horizontally and discard any seeds. Repeat with the oranges.
- Scoop the seeds from the melon halves with a spoon and discard. Slice into thin wedges, then remove the skin. In a small bowl, combine the ginger, lime juice and honey to make a dressing, then stir through the mint.
- Arrange the grapefruit, orange and melon on a large serving platter and drizzle over the dressing. Scatter over the lime zest and mint leaves. Serve with lime wedges for squeezing over.
