Ingredients
- 115g salad cheese
- 200g Greek-style yogurt
- 2 x 9-pack Tesco Finest pastry tartlets, or 18 oatcakes
- 2 baby cucumbers, cut into 1cm diagonal slices
- 9 cherry tomatoes, halved
- 9 Kalamata olives, halves
- 3 thyme sprigs, leaves picked

Use a fork to mash the salad cheese with the Greek-style yogurt; season. Add 1 tbsp each to the pastry tartlets or top the oatcakes, if using.
