Ingredients
- 3 ripe kiwis, peeled and diced
- 1 green chilli, deseeded and finely chopped
- 2 ripe vine tomatoes, finely chopped
- ¼ red onion, finely chopped
- 15g fresh coriander leaves, finely chopped
- zest and juice of 1 lime
- 1 tbsp extra-virgin olive oil

Method
- Combine the kiwis, green chilli, vine tomatoes, red onion and coriander leaves in a bowl.
- Grate over the lime zest and squeeze over the juice. Mix with the extra-virgin olive oil and season.
Tip: Make this up to 2 hrs ahead and keep, covered, in the fridge.
