Ingredients
- 3 eggs, lightly beaten
- 1 tbsp tomato purée
- 2 spring onions, thinly sliced
- 1 tbsp vegetable oil
- 2 plain tortilla wraps
- 2 sliced cooked wafer-thin ham, torn
- ½ tsp lighter mozzarella ball, torn
- ½ romaine lettuce, roughly chopped
- 1 tomato, cut into wedges
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method
- Whisk the eggs, tomato purée and spring onions together until well combined.
- Heat ½ tbsp oil in a medium-sized nonstick frying pan over a medium heat, add half the egg mix and cook for 1-2 mins until the egg has just set. Place a tortilla on top of the egg, push down and cook briefly for 30 seconds so that the egg cooks to the tortilla.
- Flip onto a plate egg-side up, top with the ham and mozzarella, then fold the tortilla over to sandwich. Repeat step 2 with the remaining ingredients to make a second tortilla omelette. Serve with the lettuce and tomato.
