Ingredients
- 1 carrot, grated or julienned
- ¼ white cabbage, finely sliced
- 150g (5oz) shredded kale
- 1 tbsp Greek yogurt
- 1 lemon, juiced
- 200g (7oz) smoked salmon
- 4 tortilla wraps
- 2 avocados, peeled, stoned and sliced

Method
- Mix the carrot, cabbage and kale together in a bowl, then stir through the yogurt and lemon juice. Allow to stand for 5 mins so the vegetables can soften slightly and the flavours develop.
- Lay 50g (2oz) smoked salmon on each wrap, then top with avocado slices. Divide the slaw between the wraps, then roll up and halve to serve.
