Leftover ham, lemon and mustard pasta salad recipe

This pasta salad is great for a light lunch or buffet spread. Simply cook the pasta, and mix with sweetcorn, olives, tomatoes, basil and ham, then drizzle over the lemon dressing. It uses leftover ham, but if you'd like to make it from scratch, you'll need 200g (7oz) of cooked ham. See method
Ingredients
- 150g (5oz) pasta shapes, use whatever you have in the cupboard
- 95g (3 1/2oz) sweetcorn, drained
- handful pitted black olives
- 150g (5oz) cherry tomatoes, halved
- handful basil leaves, shredded
- 200g (7oz) leftover cooked ham, finely sliced
For the dressing
- 1 lemon, squeezed
- 2tsp wholegrain mustard
- 2 tbsp olive oil

Method
- Bring a large pan of water to the boil and cook the pasta according to the packet instructions. Drain and set aside to cool completely.
- Make the dressing by mixing together the lemon juice, mustard and oil in a small bowl. Season to taste.
- In a serving bowl mix the cooled pasta with the sweetcorn, olives, tomatoes, basil and ham. Pour the dressing over and stir well to coat.
