Ingredients
- 4 tbsp honey
- 1 lemon, zested and juiced
- 1 tbsp olive oil
- 1kg chicken thighs
- 1 broccoli, cut into florets
- 4 baking potatoes, peeled and cut into small chunks
- 50ml double cream

Method
- Heat the oven to gas 6, 200°C, fan 180°C. Whisk the honey, lemon zest and juice and olive oil together with some seasoning, then pour over the chicken thighs in a baking dish or roasting tray. Scatter the broccoli in and around the chicken, coating in some of the sauce. Cook for 40-45 mins, basting occasionally, until the sauce is sticky and reduced and the chicken is golden and glazed.
- Meanwhile, cook the potatoes in boiling water for 15 mins until tender. Drain, then mash well with some seasoning and the double cream. Serve alongside the sticky chicken and broccoli.
