Ingredients
- 1 banana loaf cake
- 100ml double cream
- 50g Tesco Finest Swiss dark chocolate 72%, broken into pieces
- 40g (1 1/2oz) butter
- 175g (6oz) icing sugar
- 2 tsp cocoa powder
- 2 tbsp milk

Method
- Cut the cake through the middle horizontally.
- Whip the cream until it just starts to hold its shape but isn’t stiff. Spread on the bottom half of the cake and put the other half on top.
- To make the chocolate frosting, break the chocolate into pieces and melt in a bowl, over a pan of simmering water (the bowl must not touch the water). Remove and stir in the butter until melted. Sift the icing sugar and cocoa powder into a separate bowl. Add the melted chocolate and milk. Leave to thicken for about 20 mins.
- Spread the top of the cake with chocolate frosting and serve immediately or refrigerate.
