This summery Brazilian cocktail is a delicious medley of tropical fruits that will liven up any barbecue - sharp kiwis combined with sour lime, fresh mint and sweet pineapple. See method
Ingredients
- 2 kiwi, peeled, halved and roughly chopped
- 1 lime, quartered
- 2 sprigs mint, leaves picked
- 1 tsp golden caster sugar
- 2 good handfuls ice
- 100ml (3 1/2fl oz) vodka
- 100ml (3 1/2fl oz) pineapple juice
If you don't have any limes, try a lemon instead

Method
- Divide the kiwi, lime, mint and sugar between 2 short glasses and using a muddler or the end of a wooden spoon, crush them together to release the flavours. Fill each glass with ice and divide the vodka and pineapple juice between both.
