Use leftover beef and onion mixture in this Sloppy Joes recipe to make this American classic for a bonus Friday night special. Sandwiched between golden grilled seeded buns, serve with melty cheese slices, tangy gherkins and crisp salad. See method
Ingredients
- 1 tbsp vegetable oil
- 2 mixed colour peppers, finely diced
- leftover beef and onion mixture
- 100g passata
- 2 tbsp tomato ketchup
- 1 tsp American mustard
- 4-pack large seeded burger buns
- 1 garlic clove, halved (optional)
- 4 mild cheese slices
- 2 pickled gherkins, sliced, to serve (optional)
- salad leaves, to serve (optional)

Heat the oil in a frying pan over a medium-high heat. Fry the peppers for 5-7 mins until soft. Add the leftover beef and onion mixture, passata, tomato ketchup and mustard. Cook for 2-3 mins until bubbling and slightly thickened. Preheat the grill to medium-high.

Toast the buns under the grill on both sides until golden, then rub the cut sides with garlic, if you like. Put a cheese slice on each of the bottom halves of the buns, then return to the grill for 1-2 mins until slightly melted, then top with the beef mixture and the lids. Serve with gherkins and salad leaves, if you like.
