With creamy mozzarella and tangy tomatoes, this summer salad recipe is a dinner idea for two you'll want to make again and again. The mozzarella is marinated in pesto, and added to the tomato salad with basil and lemon for a new twist on a classic Caprese salad. See method
Ingredients
- 150g pack mozzarella
- 50g Tesco Finest basil pesto
- 250g pack Tesco Finest mixed baby tomatoes, halved
- 100g vine tomatoes
- ½ tbsp extra-virgin olive oil
- 10g fresh basil, leaves torn, plus extra to garnish
- ½ tsp fennel seeds, crushed
- ½ lemon, zested
- 2 slices crusty bread, toasted, to serve

Method
- Put the mozzarella in a bowl with the pesto and set aside to marinate for 10 mins.
- Mix the tomatoes with the oil, basil, fennel seeds and lemon zest; season. Tear over the mozzarella, then top with the extra basil. Spoon over any pesto left in the bowl and serve with the toast.
