Mulled red cabbage recipe

Red cabbage is a classic Christmas side. Make it even more festive with the addition of cinnamon, star anise and cloves. This warming dish is full of flavour and a great accompaniment to your turkey and roast potatoes. See method
Ingredients
- 1 tbsp vegetable oil
- 1 red cabbage, about 1kg, sliced
- 1 tbsp light brown sugar
- 50ml red wine vinegar
- 200ml Tesco Pressed Apple Juice
- 1 whole star anise
- 1 cinnamon stick, broken in half
- 3 whole cloves

Method

Heat the oil in a large saucepan over medium heat. Add the sliced cabbage and cook for 5 mins, stirring, until beginning to soften. Season with salt and black pepper and add the sugar, stirring until evenly coated.

Pour over the vinegar and apple juice and add the star anise, cinnamon stick and cloves.

Bring to a simmer, cover with a lid and reduce to a medium-low heat, cooking for 20-25 mins while stirring occasionally.

Remove the lid and cook for another 10-12 mins until the liquid has reduced. Spoon into a warmed serving dish and remove the whole spices before serving.
