Ready in just 30 minutes, this gorgeous bhuna paneer is perfect for midweek or a Friday night fakeaway. Paneer is lighter than most cheeses and is great in rich tomato sauces. Give it a go! See method
Ingredients
- 2 tbsp vegetable oil
- 2 x 200g packs paneer, cut into 2cm cubes
- 3 garlic cloves, chopped
- 3cm piece ginger, peeled and grated
- 1 onion, finely sliced
- 1 red pepper, cut into small chunks
- 1 green pepper, cut into small chunks
- ½ tsp ground turmeric
- ½ tsp garam masala
- 1 tsp hot chilli powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 400g tin chopped tomatoes
- 15g fresh coriander, finely chopped
- cooked brown rice (optional)
- naan (optional)
- lime pickle (optional)
If you don't have chopped tomatoes, chop up a tin of plum tomatoes instead

Method
- Heat the oil in a lidded frying pan over a medium heat and fry the paneer, in batches if needed, for 1½ mins each side or until light golden. Transfer to a plate and set aside.
- Add the garlic and ginger to the pan, cook for 1 min, then add the onion and 1¼ tsp salt. Stir in the peppers and spices, cook for 2 mins, then add the tomatoes and 200ml water. Bring to a simmer, cover, then cook over a low heat for 10 mins, stirring occasionally, until thickened.
- Stir in the paneer, re-cover and cook for 2 mins. Scatter with the fresh coriander and remove from the heat. Serve with rice or naan and lime pickle, if you like.
