Stir-fried green beans recipe

This super-quick, Keralan-inspired stir-fry comes together in minutes, yet is packed full of flavour. It's great with flatbread and a dollop of yogurt and pickles on the side. See method
Ingredients
- 4 tbsp desiccated coconut
- 2 tbsp vegetable oil
- 1 tsp yellow mustard seeds
- 2 garlic cloves, chopped
- 1 small red onion, finely sliced
- ½ tsp ground turmeric
- ½ tsp cumin
- 1 bird eye chilli, finely chopped
- 2 x 220g packs green beans, trimmed and sliced

Method
- Put the coconut in a bowl and pour over enough boiling water to cover; set aside.
- Meanwhile, heat the oil in a lidded frying pan over a medium-high heat. Add the mustard seeds and, once popping, stir in the garlic, onion and ½ tsp salt. Stir-fry for 4-5 mins until the onions are soft and light golden.
- Add the spices and chilli, cook for 1 min, then stir in the green beans and 75ml water. Reduce the heat to medium, then cover and cook for 7-9 mins until tender, adding a splash more water if the beans start to catch. Drain the coconut, stir into the pan and cook for 1 min before serving.
