Ingredients
- 2 large, ripe passion fruit, halved
- large handful mint leaves, torn
- 2 tbsp light brown sugar
- 65ml white rum
- soda water, to top up

Method
- Spoon the pulp from the passion fruit and divide between 2 tall glasses with the mint leaves, sugar and rum.
- Use the end of a rolling pin or a wooden spoon handle to muddle (mash) the ingredients together, releasing their flavour.
- Put a handful of crushed ice into each glass and top up with soda water to finish the mojito.
