Ingredients
- 2 peaches, stones removed and chopped
- 50ml (2fl oz) sugar syrup
- leaves from 3 mint sprigs, plus extra sprigs to decorate
- 1 litre (1 3/4 pints) sparkling water

Method
- Put the peaches, syrup and mint leaves in a blender and whizz until smooth, but you can still see tiny flecks of the peach skin.
- Put a handful of ice cubes in 4 hi-ball glasses, then divide the peach purée between them and top with sparkling water. Stir, then decorate with a mint sprig and serve.
