Method
Liven up steak or a burger with these tasty skin-on oven-baked chips served with garlic and turmeric mayonnaise. Serve with lobster for a romantic Valentine's Day dinner, or rustle up a batch to eat with steak, fish, or to eat on their own.
- Preheat the oven to gas 7, 220°C, fan 200°C. Boil the chips for 3 mins. Drain and shake well, then leave to steam-dry for 3-5 mins; pat dry with kitchen paper if necessary.
- Transfer to a baking tray, then add the oil and a pinch of salt. Toss together, then arrange in an even layer. Bake for 18-20 mins until one side is really golden. Turn and bake for a further 8-10 mins until crisp and tender.
- Mix the turmeric with 1 tsp boiling water. Mix with the garlic and mayonnaise, then serve with the chips.
