Pork kofta flatbreads recipe

The whole family will enjoy these delicious pork koftas. Serve with flatbreads, homemade chips and fresh tzatziki and let everyone load up their plates. See method
Ingredients
- 4 Tesco Finest flatbreads
- lettuce, tomato and cucumber slices, to serve
For the koftas
- 500g 5% fat pork mince
- 25g breadcrumbs
- ½ tsp cumin
- ½ tbsp olive oil
- handful of fresh parsley
- 2 tsp garlic paste (or two cloves, crushed)
For the tzatziki
- 30g cucumber
- 100g yogurt
- 1 tsp olive oil
- ½ tsp garlic paste (or 1 clove, crushed)
- juice of ¼ lemon
- small handful of dill
For the chips
- 4 medium-sized Maris Piper potatoes
- 1 tbsp olive oil

Method
- Soak 4 bamboo skewers in water for 30 mins. Meanwhile, preheat the oven to gas 6, 200°C, fan 180°C.
- Put all the ingredients for the pork koftas in a mixing bowl and use clean hands to mix everything together, then make 8 oval-shaped koftas. Slide two koftas onto each bamboo skewer and leave to one side while you prepare the chips.
- Peel the potatoes and cut into chip shapes using a sharp knife. Toss in the olive oil and a pinch of salt. Bake in the oven for 25 minutes, turning halfway through. After the first 10 minutes, add the koftas to the oven and bake for the remaining 15 minutes, turning halfway through.
- While the pork koftas and chips are cooking, make the tzatziki. Grate the cucumber and put in a bowl with the yogurt, olive oil, garlic paste, lemon juice and chopped dill.
- Once the koftas and chips have finished cooking, place the flatbreads on serving plates and add two koftas per flatbread, a handful of chips, a little tzatziki and some lettuce, tomato and cucumber. Use your hands to wrap it up, and dig in.
