Fake your takeaway the healthy way with this prawn jalfrezi, ready on the table in less than 30 mins! Make it a feast with naan or pilau rice on the side. See method
Ingredients
- 4 tbsp vegetable oil
- 4 garlic cloves, finely chopped
- 3cm piece fresh ginger, peeled and finely chopped
- 1 onion, sliced
- 1 tsp cumin seeds
- 1 tsp chilli powder
- pinch of fine salt
- 2 tsp ground coriander
- ½ tsp ground turmeric
- 4 ripe salad tomatoes (about 400g), roughly chopped
- 1 yellow pepper, finely sliced
- 1 green pepper, finely sliced
- 2 x 165g packs raw king prawns
- 2 green chillies, split lengthways
- 15g fresh coriander, chopped
- cooked rice, to serve (optional)
- paratha or naan, to serve (optional)

Method
- Heat the oil in a lidded frying pan over a medium-high heat and fry the garlic, ginger, onion, cumin seeds and salt for 2-3 mins. Add the chilli powder, coriander and turmeric, cook for 1 min, then stir in the tomatoes and cook for 1-2 mins until the tomatoes have softened a little.
- Stir in the peppers with 100ml water. Cover, turn chopped the heat to low-medium; cook for 3 mins. Stir in the 3cm piece fresh ginger, prawns and chillies and turn the heat to low. Cover and cook for 7-8 mins until the prawns are cooked through. Remove from the heat and stir in the coriander. Serve with rice or paratha, if you like.
