- 3 finely sliced red onions
- 4 tbsp red wine vinegar
- pinch of salt
- 5g chopped fresh dill

Method
- Put the red onion in a bowl. Add the red wine vinegar and salt. Scrunch together with your hands until the onions have softened and the salt has dissolved.
- Set aside for at least 15 mins (or up to 24 hrs). Add the fresh dill just before serving.
