Rustle up this ridiculously tasty sweet treat in no time. With white, milk and dark chocolate, crispy rice snaps, gooey marshmallows, and chewy dried fruit, this rocky road recipe is seriously easy. The hardest part? Waiting for them to set before you can tuck in! See method
Ingredients
- 100g salted butter
- 200g milk chocolate, roughly broken
- 100g 74% dark chocolate, roughly broken
- 70g golden syrup
- 100g mini marshmallows
- 80g Tesco rice snaps cereal
- 200g dried mixed fruit
- 100g white chocolate chips

Method
- Line a 20 x 20cm square tin with baking paper.
- Place a heatproof bowl over a pan of simmering water and melt together the butter, milk chocolate, dark chocolate, golden syrup and half of the marshmallows (50g). Stir well and don’t worry if not all the marshmallows melt. Remove from the heat.
- Reserve a small handful of marshmallows, rice snaps and dried mixed fruit, then stir the rest into the chocolate mix, along with 50g of the white chocolate chips.
- Pour the mixture into the lined tin and use the back of a spoon to spread the mixture into the corners of the tin.
- Scatter over the reserved handfuls of marshmallows, rice snaps and dried mixed fruit and place in the fridge for 2 hours to set.
- Melt the remaining white chocolate and, using a spoon or a food bag with the corner cut off, drizzle over the rocky road. Allow to set in the fridge.
- To serve, cut into 16 squares.
