Jammy roasted grapes and creamy brie make the perfect pair with toasted focaccia. This sophisticated snack is the perfect starter to get the party going, or enjoy after a meal for an elegant way to end the evening. See method
Ingredients
- 500g bunch red grapes
- 1 tbsp clear honey
- 1 tbsp red wine vinegar
- 1 tbsp extra-virgin olive oil
- 1 tsp demerara sugar
- 4 fresh thyme sprigs, plus extra to serve (optional)
- 190g pack ripened Brie, at room temperature
- 225g pack Tesco Finest rosemary & garlic focaccia, sliced and toasted

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Remove the grapes from the vine and put in a baking tray. Add the honey, vinegar and oil and toss to coat. Sprinkle over the sugar, stir again then add the thyme sprigs. Roast for 25 mins, covering the tray with foil halfway, until the grapes have softened and are starting to wrinkle.
- Place the Brie on a serving plate and spoon the grapes and any juices around. Serve with the toasted focaccia and top with extra thyme sprigs, if you like.
