This no-cook sauce is super simple. Try this salsa verde with your favourite BBQ dish. See method
Ingredients
- 100g mixed fresh herbs (such as parsley, basil or mint)
- 2 tsp rinsed capers
- 8 cornichons (or 2 gherkins)
- 1 garlic clove
- 3 tbsp red wine vinegar
- juice of 1 lemon
- 7 tbsp extra-virgin olive oil

Method
- Finely chop 100g mixed fresh herbs, capers, cornichons (or gherkins) and garlic. Transfer to a bowl; stir in your red wine vinegar, the juice of 1 lemon and 7 tbsp extra-virgin olive oil until it comes together. Season to taste.
