Ingredients
- 70g unsalted butter
- 860g (1 small) red cabbage, quartered, cored and finely shredded
- 2 cooking apples (400g), peeled and cut into small chunks
- 3 tbsp soft light brown sugar
- 4 tbsp cider vinegar
- 200ml apple juice
- 1 cinnamon stick

Melt the butter in a large, lidded pan. Add all the ingredients, season and stir. Cover and cook over a very low heat for 1 hr 15 mins, stirring occasionally, until the cabbage is really tender.

Add a little water to the pan if it begins to look a bit dry (we added 50ml). Remove the cinnamon stick and check the seasoning. If making ahead, leave to cool, then store in an airtight container in the fridge for up to 3 days, or freeze for 3 months. Reheat until piping hot throughout.
