Ingredients
- 6 plums, halved and stoned
- 2 cinnamon sticks
- 2 star anise
- 1tsp vanilla extract
- 2 oranges, juiced
- 2tbsp clear honey
- 2tbsp soft brown sugar
For the cream
- 4tbsp caster sugar
- 4 Earl Grey tea bags
- 200ml (7fl oz) double cream
- 1⁄4tsp vanilla extract

Method
- Preheat the oven to Gas Mark 5, 190°C, fan 170°C. Fill a pan with 125ml (4fl oz) water. To make the cream, add the sugar and tea bags, bring to the boil, then reduce the heat and simmer for 6 minutes, until syrupy. Discard the tea bags, and set aside to cool.
- Arrange the plums, cut- side up, the cinnamon and star anise in an ovenproof dish. Drizzle over the vanilla, orange juice and honey, then scatter with the sugar and bake for 20–25 minutes.
- Meanwhile, whip the cream with the vanilla, then fold in the Earl Grey syrup. Serve with the plums.
