Treat yourself to a refreshing mojito, spiked with hot jalapeños and amped up with a tropical twist of mango juice. Muddled together with ice, sugar, mint and soda water for the ultimate summer's night cocktail. See method
Ingredients
- 1-2 tsp demerara, to taste
- 2 sprigs fresh mint
- ½ a fresh green jalapeno chilli, thinly sliced and seeds removed
- 50ml dark rum
- 75ml mango juice
- 100ml soda water, to top up
- handful ice cubes

Method
- Put the sugar, 1 sprig of mint and a couple of slices of chilli into a tall highball glass and muddle with the end of a wooden spoon or cocktail muddler until the mint is bruised.
- Pour the rum and mango juice into the glass and stir until the sugar has dissolved. Add a handful of ice and top up with soda water.
- Garnish the mojito with the remaining sprig of mint and a couple more slices of jalapeño before serving.
