We've given the classic tuna sarnie a spicy twist with a limey sriracha mayo and served it as an open sandwich with avocado for an easy, modern twist. That's your next lunch sorted! See method
Ingredients
- 110g tin tuna steaks with a little spring water
- 2 heaped tbsp light mayonnaise
- 2 tbsp sriracha sauce
- 1 tsp lime juice, plus wedges to serve (optional)
- 2 spring onions, trimmed and finely sliced
- 1 small avocado, finely sliced
- 2 slices Tesco Finest rye and mixed seed sourdough bread, toasted
- 2 tsp sesame seeds, toasted
If you don't have any limes, try a lemon instead

Method
- Mash the tuna in a bowl with the mayonnaise, 1 tbsp sriracha and the lime juice. Stir in the chopped spring onion whites and season with black pepper.
- Arrange the sliced avocado on the toast, then pile on the spicy tuna mixture. Drizzle over the remaining sriracha, sprinkle over the sesame seeds and scatter with the spring onion greens to serve.
