Bursting full of brightly coloured stone fruits and punchy ginger, you'll love this light and vibrant fruit slaw - it's the perfect side dish to a summer barbecue or an outdoor picnic. See method
Ingredients
- 2 nectarines, sliced into thin wedges
- 2 plums, sliced into thin wedges
- 2 peaches, sliced into thin wedges
- 1/2 cabbage, sliced into thin strips
- 1 tsp root ginger, grated
- 2 spring onions, minced
- 1 garlic clove, minced
- 1 tsp rice wine vinegar
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method
- Slice the fruits into thin wedges and the cabbage into thin strands and combine in a bowl. Mix in the ginger, spring onions and garlic and drizzle over the vinegar. Leave to marinate for 30 minutes before serving to soften the fruit and cabbage in the vinegar.
