Method
- Purée half the strawberries with 1 tbsp of water in a food processor. Scoop out the passion fruit pulp and add half of it to the coulis. Sweeten to taste with a little of the honey if necessary. Thinly slice the mint leaving a 4 leaves whole for garnish.
- Layer up in glasses or jam jars; some sliced strawberries, mint, yogurt, coulis, honey, passion fruit repeating until all the ingredients are used up. Finish with granola and garnish with the whole mint leaves.
TWISTS:
Nutty sundaes: Try topping with some crushed nuts and dried fruits instead of granola.
Tropical sundaes: Use a flavoured yoghurt such as coconut and layer up with sliced banana and chunks of pineapple. Top with desiccated coconut
Cherry bakewell sundaes: Layer up fresh pitted cherries with cherry coulis, natural yogurt flavoured with a little honey and almond extract and then top with toasted flaked almonds and extra honey.
