Sweet potato and beef quesadillas recipe

Kids will adore this quesadilla recipe; it's something different to their usual cheese sarnie, it gives them a chance to eat without cutlery (fun) and most importantly, of course, it tastes great. See method
Ingredients
- 1 sweet potato, peeled and cut into 1cm cubes
- a few sprays of vegetable oil
- 250g (from 500g pack) 5% fat beef mince
- ½ red onion, finely chopped
- 2 garlic cloves, finely crushed
- 1 tbsp tomato purée
- 145g taco mixed beans (from a 395g tin)
- 2 plain tortilla wraps, cut into triangles
- 30g grated lighter mature cheese
If you don't have mince, cut open some sausages instead

Method
- Add the sweet potato to a pan of boiling water and cook for 8-10 mins until soft. Drain.
- Heat the oil in a large frying pan over a high heat. Add the mince, onion and garlic and fry for 8 mins until the mince is starting to crisp at the edges. Stir through the tomato purée, mixed beans and drained sweet potato.
- Divide the beef and bean mix between two tortillas, placing it on one half of each tortilla. Top with the Cheddar and fold over the wraps to sandwich each quesadilla.
- Slide the quesadillas into a dry frying pan and cook for 2-3 mins then flip and cook for another 2 mins until the cheese has melted. Slice in half to serve.
