Tomato, peach and burrata salad recipe

This 15-minute salad is bursting with summer flavour from the fresh peaches, juicy tomatoes and creamy burrata. Serve with griddled ciabatta toasts so you can eat it bruschetta-style. See method
Ingredients
- 2 ciabatta rolls
- 1 garlic clove, halved
- olive oil, for drizzling
- 500g salad tomatoes, sliced
- 250g pack Tesco Finest mixed baby tomatoes, halved
- 3 peaches, stoned and cut into wedges
- 60g pack wild rocket
- 20g basil, leaves picked
- 250g Tesco Finest Italian burrata, divided into chunky pieces with a spoon
For the dressing
- 2½ tbsp olive oil
- juice of ½ lemon
- 10g basil, leaves picked and finely chopped

Method
- Whisk together the dressing ingredients, season, then set aside.
- Preheat the grill to high. Thinly slice the ciabatta rolls lengthways. Lay on a baking tray and grill for 1 min each side until golden. Allow to cool a little, then rub with the cut sides of the garlic. Drizzle with a little olive oil.
- In a large salad bowl, gently toss together the tomatoes, peaches, rocket and basil leaves. Transfer to a platter and add the burrata pieces. Drizzle over the dressing, then serve with the ciabatta alongside.
