Sometimes a warm salad is in order and this recipe with watercress, roasted tomatoes, crispy bacon, tangy feta and pine nuts will pack your bowls with flavour. All the textures and flavours come together with the simple and sweet balsamic vinegar dressing. See method
Ingredients
- 8 medium vine-ripened tomatoes, halved
- 3 tbsp olive oil
- 4tsp balsamic vinegar
- 1tsp chopped garlic
- 8 rashers smoked streaky bacon, roughly chopped
- 2 x 75g bags watercress
- 1 small red onion, sliced
- 50g (2oz) pine nuts,toasted
- 100g (3½oz) feta cheese, crumbled
If you don't have red onions, try using white, brown or spring onions

Method
Sometimes a warm salad is in order and this recipe with watercress, roasted tomatoes, crispy bacon, tangy feta and pine nuts will pack your bowls with flavour. All the textures and flavours come together with the simple and sweet balsamic vinegar dressing.
- Preheat the oven to Gas 3, 170°C, fan 150°C.
- Place tomatoes cut side up onto a roasting tray, drizzle with 1tbsp oil and 2tsp of vinegar. Season and roast until softened, about 30 minutes.
- For the dressing, whisk together the remaining oil, vinegar and garlic.
- Pan-fry the bacon until crisp, then mix with watercress, red onion, pine nuts, feta and dressing. Divide the tomatoes between 4 plates and pile the salad on top.
