Ingredients
- 250g (8oz) plain flour
- ½ tsp baking powder
- pinch of salt
- 100g butter, diced
- 50g caster sugar
- 60g (2 1/2oz) sultanas
- 1 egg, beaten
- 6 tbsp milk
- butter, to serve (optional)

Method
- Sift together the flour, baking powder and salt. Add the butter and rub in with your fingers until the mixture resembles fine breadcrumbs. Add the sugar and sultanas. Add the egg and sufficient milk to bind the mixture together.

- Place on a board and roll out to about 1/2-1cm. Using a 6cm pastry cutter, cut into round shapes, about 20.
- Heat a heavy based frying pan or flat griddle pan and lightly grease. Cook the cakes for about 3-4 minutes on a gentle heat. Serve cakes hot and buttered.
