Method
- Sieve 2 tbsp each cocoa powder and icing sugar into a mixing bowl. Stir through the whipping cream, then whip with an electric whisk until it just holds its shape. Spoon into a piping bag fitted with a star nozzle, if you like; set aside.
- Put the remaining 2 tbsp cocoa powder and 2 tbsp icing sugar into a heatproof jug with the salt, then gradually pour in 300ml boiling water to dissolve. In a separate microwave-safe jug, heat the milk in the microwave in 20 sec bursts, stirring in between, until steaming. Pour into the cocoa jug, stir well, then divide between 2 small mugs.
- Pipe or spoon over the whipped chocolate cream, then dust with extra cocoa powder to serve, if you like.
