Ingredients
- 400g (13oz) blueberries, fresh or frozen
- 75ml (3fl oz) maple syrup
- 1 lime, finely grated zest and juice
- 700ml full fat Greek natural yogurt, chilled
- mint sprigs and extra fresh blueberries to serve
If you don't have any limes, try a lemon instead

Method
- Place the blueberries, maple syrup and lime juice in a medium saucepan over a medium heat and bring to a simmer. Reduce the heat, cover with a lid and then cook, stirring occasionally, for 10 minutes or until the fruit is very soft and syrupy. Pass through a sieve into a bowl.
- Chill the blueberry mixture in the fridge for 2 hours or until completely chilled.
- Remove 3 tablespoonfuls of the blueberry mixture and set aside. Then fold together your blueberry mixture and yogurt with the lime zest and freeze the mixture in your ice cream maker according to the manufacturer's instructions. Spoon into a 1 litre freezer-proof box, drizzle the reserved blueberry mix in a swirl effect over the top and freeze for several hours for a scoopable consistency.
- If you don’t have an ice cream machine, pour the mix into a freezer-proof container and whisk every 45 minutes or so to break up any ice particles. Repeat this process 3-4 times.
- To serve, scoop into balls and serve immediately with fresh blueberries and mint sprigs.
