Use the leftover liquid from mojito fruit skewers to make this simple summer cocktail. An iced tea with a fizzy, boozy twist, if you need a cocktail to help you cool off this is the one for you. See method
Ingredients
- 4 black teabags
- 3 tbsp clear honey
- 200ml dark rum (make up the quantity with the liquid from the Mojito fruit skewers, if you like)
- 300ml lemonade
- ice cubes
- 8 mint sprigs
- 1 lemon, sliced

Method

Put the teabags in a mug and pour over 200ml boiling water. Leave to infuse for 2 mins, then squeeze out the teabags and discard. Add the honey, stir to dissolve and set aside to cool completely.

Mix the cooled tea with the rum and lemonade. Fill 4 tumblers with ice, then pour over the boozy Arnold Palmer and garnish with mint sprigs and lemon slices. If you’re taking it out with you, transfer to the fridge for a few hours to chill, then pour into a Thermos with the garnishes and a few ice cubes.
