Mojito fruit skewers recipe

Simple, sweet and boozy, these mojito fruit skewers are guaranteed to wow the crowd. If you're planning a beach picnic, make sure to pack these as your dessert of choice – you won't regret it! See method
Ingredients
- 6 kiwis, peeled, each cut into 8
- 270g pack pineapple chunks
- 250g pack mango pieces
- 2 limes, zested and juiced
- 4 tbsp caster sugar
- 120ml dark rum (or elderflower cordial)
- 20g fresh mint, leaves picked and finely chopped
If you don't have any limes, try a lemon instead

Toss all the ingredients together in a bowl, cover and leave to sit at room temperature for 1 hr (or overnight for a stronger flavour) until the fruit has softened and is sitting in a syrupy liquid.

Strain, reserving the liquid for the Arnold Palmer recipe, if you like, and thread the fruit onto skewers. Will keep, covered, in the fridge for up to 3 days.
