For a beautiful weekend brunch that makes the most of seasonal red grapefruit, try this deliciously refreshing breakfast idea. Brush juicy grapefruit halves with sweet honey, grill until caramelised and top with creamy Greek yogurt, fresh mint and chopped pistachios – simple yet stunning, and ready in just 15 minutes. Ingredients
- 2 red grapefruits
- 4 tsp clear honey
- 120g Greek-style yogurt
- 4 mint sprigs, leaves picked
- 1 tbsp pistachio nuts, roughly chopped (optional)

Method
- Preheat the grill to high. Cut 5mm off the top and bottom of each grapefruit to help them stand up under the grill, then halve each horizontally. Use a sharp knife to cut between each segment, leaving the fruit in the skin.
- Brush ¼ tsp honey over each grapefruit half, then grill cutside up for 3-5 mins until caramelised. Top with the remaining honey, then serve with the yogurt and mint. Sprinkle with pistachios, if you like.
Tip: Honey and lemon is a classic combination, but honey's floral flavour works just as well with grapefruit.
