It wouldn't be Christmas without Brussels sprouts. Try something new this year with tangy chorizo, buttery hazelnuts and herby thyme for a winning Christmas side dish that everyone will love. See method
Ingredients
- 1kg Brussels sprouts, trimmed
- 1 tsp vegetable oil
- 150g chorizo, chopped
- 25g hazelnuts, toasted and chopped
- 1 sprig thyme, chopped

Method
- Simmer the sprouts in boiling water for 7 mins or until tender. Drain, then halve.
- Heat the oil in a large frying pan over a medium heat. Fry the chorizo for 2 mins, turning halfway.
- Add the sprouts and cook for 2 mins to warm through. Scatter over the hazelnuts and thyme.
