If there was ever a drink made for summer, it would be this cider-ita punch, made with refreshing apple cider and topped up with lime juice and mint leaves for a tangy kick. Fancy a bit of spice to bring things up a notch? Add freshly sliced chillies for a drink made to enjoy in the sunshine with friends. See method
Ingredients
- 125ml lime juice (4-5 limes – see tip)
- 2 tsp caster sugar
- 3 x 440ml cans apple cider
- 625ml soda water, chilled
- 3 mint sprigs, leaves picked
- 1 green apple, cored and thinly sliced
- a few handfuls of ice
- 1 green chilli, thinly sliced (optional)
If you don't have any limes, try a lemon instead

In a large jug, mix the lime juice and sugar until the sugar has dissolved. Chill if preparing ahead.

Add the cider and soda water to the sweet lime juice, then the mint leaves and apple slices. Divide the ice between 6 glasses; pour in the punch. Garnish with the chilli, if you like a bit of spice.
Cook's tip: For the juiciest limes, blast for 1 min in the microwave before juicing.
