These fruit and nut chocolate cups are a great prep-ahead snack for when you need a pick-me-up treat that isn't ultra processed. You can flex and use whatever dried fruit or nuts you have in your cupboards! See method
Ingredients
- 150g 75% dark chocolate, broken into chunks
- 50g raisins and cranberries mix
- 30g shelled pistachios, finely chopped
- 15g flaked almonds, toasted
- 3 tbsp smooth peanut butter

Method
- Line a 12-hole muffin tin with muffin cases or cut out 12 squares of baking paper, each slightly larger than the muffin hole. Scrunch up, then unfold and use to line the tin holes.
- Melt the chocolate in short bursts in the microwave for 1-2 mins or melt in a heatproof bowl set over a pan of gently simmering water.
- Divide two-thirds of the chocolate between the muffin holes and top with the raisins and cranberries, pistachios (saving a little to garnish) and almonds.
- Warm the peanut butter in the microwave for 20-30 secs until runny and smooth, then drizzle over the fruit and nuts. Top with the remaining chocolate, then sprinkle over the reserved pistachios. Chill in the fridge for 2 hrs or until set. Remove from the paper cases.
- Store in an airtight container in the fridge for up to 2 weeks.
Freezing and defrosting guidelines
