If you like a dirty Martini, you'll want to try the Gibson cocktail – it's elegant, chic and a little dirty from the pickled onions. Use dry gin and extra dry vermouth for the signature crisp finish, balanced with the savoury flavour of the pickled onions. See method
Ingredients
- 50ml London dry gin
- 2 tsp extra dry vermouth
- 3 pickled pearl silverskin onions plus ½ tsp of the pickling liquid
- ice cubes
If you don't have any pears, try using apples

Method
- Pour the gin, vermouth and pickling liquid into a mixing glass or jug. Add a large handful of ice and stir for around 30 secs or until chilled and diluted to your taste.
- Fine-strain into a chilled Martini glass and garnish with the pickled pearl onions threaded onto a cocktail stick to serve.
