Ingredients
- 5 rosemary sprigs
- 4 pitted Nocellara olives
- 75ml gin
- 30ml vermouth
- ice cubes

Method
- Strip a few leaves from the base of 4 of the rosemary sprigs and thread an olive onto each, then transfer to the fridge until needed.
- Add the gin, vermouth and 1 tbsp cold water to a mixing glass or jug. Add a generous handful of ice cubes and use the remaining fresh rosemary sprig to stir well until the mixture is well chilled.
- Strain into 4 small liqueur glasses and serve with the rosemary and olive garnish.
Tip: Thicker, tougher rosemary sprigs make a nice stirrer and impart subtle flavour, but if your sprigs are softer and younger, then add them to the mixing glass and stir with a spoon instead.
