Ingredients
- 20g fresh mint leaves
- 60ml elderflower cordial
- crushed ice
- 300ml prosecco
- 200ml soda water
- 2 mint sprigs
- 2 lime slices
If you don't have any limes, try a lemon instead

Method
- Muddle the fresh mint leaves in a pestle and mortar or cocktail shaker until gently crushed. Add the elderflower cordial and mix, then strain through a fine sieve between 2 wine glasses.
- Add crushed ice, then add 150ml prosecco to each glass. Top up each drink with 100ml soda water and garnish each with a sprig of mint and a slice of lime.
